The Greg Sandwich

When I originally became passionate about freezer meal planning, I was trying to figure out how to share that passion with people. My brother, Greg, was the one that encouraged me to start a blog. I laughed at him when he suggested it because I knew absolutely nothing about building and managing a website. 

Greg helped me pick the name of my website and has helped edit some of my blog posts, including this one.  We initially brainstormed the name, Just Eat It (this seemed fitting since we are both parents), but thought better of it when we realized that justeatit.com might send the wrong message.  I didn’t really want the word tit in the name of my website.   And, one, two, and three more bites were already taken, so we chose Four More Bites.

After getting Four More Bites going, I asked my brother if he would come up with a sandwich recipe for the blog, because he is a sandwich connoisseur.  Sandwiches are my brother’s favorite meal, so much so that he has pictures of both of his daughters’ first sandwiches. Most people put emphasis on milestones like the first tooth, first steps, or first time riding a bike.  For my brother, his daughters’ first sandwich was a big deal.  Don’t worry, he thought the other milestones were important, but their first sandwich was important to him too.  My brother came up with this fantastic sandwich recipe.  I decided it only seemed fitting to call this sandwich The Greg.

The Ingredients in the Greg Sandwich

The Greg sandwich, in my opinion, is the perfect combination of meat, cheese and veggies on a sandwich.  I use sourdough or Italian bread for this sandwich, but you could use whatever bread you like.  I have tried it with marble rye, and that’s yummy too.  My family isn’t big on spicy, so we use mild banana peppers. But if you like a little kick, then you could use hot banana peppers.  As for the thinly sliced tomatoes and onions, I love using my mandoline slicer to make sure they are sliced very thin and all the same thickness.  If you have never used a mandoline slicer, you should try it out.  It makes slicing a lot easier.

Another ingredient in this sandwich is called sandwich sprinkle.  It is a seasoning made by Penzey’s Spices.  If you haven’t heard of Penzey’s, you have to check them out.  The sandwich sprinkle seasoning is one of our favorites.  We also like their gift boxes, roasted garlic, and vanilla.  My brother actually gave me a Penzey’s gift box one year for Christmas and it was such an awesome gift.  (My brother has always been a great gift giver). 

Grilling the Greg Sandwich

When grilling these sandwiches, I find it easiest to use a panini maker or George Forman grill.  I like this panini maker best because you can fit 2 or 3 sandwiches on at time.  What I like about this George Forman grill is that the plates are removable. This makes clean up a breeze. If you don’t have a panini maker or George Forman grill, using a skillet works great too. This sandwich is delicious any way you grill it.

If you are looking for a fantastic sandwich that the whole family will love, you have to try out The Greg sandwich.  It’s flavorful, saucy and cheesy.  I guarantee there was a lot of thought put into creating this recipe.  My brother takes his sandwiches very seriously.  Try it out and let me know what you think.  Who knows, maybe The Greg will become a famous sandwich like The Rachel.

Description

This is a cheesy, juicy, delicious sandwich that was created by my brother, Greg.  He is a sandwich connoisseur.  He takes his sandwiches very seriously.  Trust me when I say, this sandwich is great.


Ingredients

Scale
  • 2 slices of sourdough or Italian bread
  • 2 tbsp pizza sauce
  • 2 tbsp freshly grated Romano cheese
  • 1015 pepperoni slices
  • 23 slices of oven roasted chicken (substitute ham or roast beef if you prefer)
  • Tomato, thinly sliced
  • Red onion, thinly sliced
  • Banana peppers
  • Sandwich Sprinkle (substitute salt, pepper, oregano if you prefer)

Instructions

  1. Preheat panini maker, George Foreman, or skillet
  2. On a plate or cutting board, lay the bread slices flat and spread 1 tbsp of pizza sauce on each slice
  3. On one slice of bread sprinkle 1 tbsp of Romano cheese
  4. Then add a layer half of the pepperoni
  5. Add 2-3 slices of chicken
  6. Layer the tomato, onion, and banana pepper
  7. Top with the rest of the pepperoni and the remaining tbsp of Romano cheese
  8. Sprinkle a pinch of Penzey’s Sandwich Sprinkle on top of the cheese
  9. Top with remaining slice of bread, with sauced side facing the cheese.
  10. Grill until bread is golden brown and cheese is melted.
