Fantastic Healthy Flatbread Breakfast Pizza

About 4 weeks ago, I started Noom. I am not trying to sell anyone on it, and I don’t have some deal with Noom where I get money for talking about their program (although, I should look into that. Ha!). I am simply a busy mom (6 months postpartum, wanting her body back) who has been doing Noom for 4 weeks. Noom has been awesome for me, and I’ve lost 9 pounds so far. I am doing my best to make healthier choices so I decided I better start creating some healthier recipes. Don’t get me wrong, anything you make from scratch is healthier than all that processed food (normally I would have called it junk, but I have learned through Noom not to label food). It’s just important for me to be more aware of my caloric intake and what I am putting in my body. One of the first recipes I created, after realizing I needed to make healthier choices, was this fantastic healthy flatbread breakfast pizza.

Eggs

The big thing I did differently for this recipe was I used mostly egg whites instead of all whole eggs. Did you know that a whole egg contains about 78 calories, but egg whites are only 17 calories? Honestly, I never really paid attention to that.

Cheese

Another thing I did differently with this recipe, is I stuck to the serving size for cheese. I used Mexican style shredded cheese, and the serving size on the package says 1/3 cup. (I actually measured it out versus just grabbing handfuls). Before, I probably would have put 1/2 to 3/4 cup of cheese on this pizza. That’s a lot more calories that I would have added for not a lot of difference in flavor.

Flatbread

Now for the flatbread part of this fantastic healthy flatbread breakfast pizza. I love this flatbread. My kids and my husband love it too. I never thought they would all go for wheat flatbread because we have always been a white bread/flour tortilla kind of family. Well, we have officially been converted. Whole grains are so much better for you too. Now if I could just figure out how to make my own wheat flatbread that would be awesome. Maybe some day.

Bacon

Let’s talk about bacon. Bacon makes everything better. You certainly could substitute turkey bacon in this recipe, but turkey bacon just isn’t the same. Use my perfectly cooked bacon recipe to cook your bacon up for this recipe. You will have leftover bacon, which is perfect to put in the refrigerator and use for something the next day, or you can freeze the cooked bacon. You could also use precooked bacon if you don’t want to take the time to cook your own bacon, but like the turkey bacon, it’s just not the same.

My whole family loved this flatbread breakfast pizza. It is delicious and it’s not just a meal for breakfast time. Plus it’s kid and picky husband approved. (Although, they all have it without the peppers, onions and mushrooms). I could eat breakfast for every meal. Yum!

Description

My whole family loved this flatbread breakfast pizza. It is delicious and it’s not just a meal for breakfast time. Plus it’s kid and picky husband approved.


Ingredients

Scale
  • 1 Toufayan wheat flatbread
  • 1 whole egg and 4 egg whites
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 strips of cooked bacon, crumbled
  • 1/3 cup Mexican style shredded cheese
  • 1/2 of a yellow pepper, chopped
  • 1/4 of an onion, chopped
  • 1/2 heaping cup of mushrooms, chopped

Instructions

  1. Preheat oven to 350 degrees
  2. Saute peppers, onions and mushrooms until cooked through.
  3. While peppers, onions and mushrooms are cooking, put the one whole egg and 4 egg whites in a small bowl and whisk.  Add the salt, black pepper and garlic powder and whisk again.  Scramble eggs in a pan and cook until just set.  Remove from stove and set aside.
  4. Check on the vegetables and remove them from the heat if they are cooked to desired doneness. (remember they will cook in the oven too).
  5. Line a cookie sheet with parchment paper.
  6. Lay down your flatbread.Flatbread on parchment lined cookie sheet

  9. Bake for 15 minutes
  10. Cut into 8 slices and enjoy!

Notes

These flatbread breakfast pizzas are so versatile.  You can add whatever vegetables you like.  Spinach would be a great choice.  Also, substituting sausage or ham for the bacon are great options too.  If you don’t want meat on it, just add some more whole eggs or egg whites to the scrambled egg portion.
