Italian Pasta Salad

My mom gave me this recipe and it will be one I will pass down to my kids. She got the recipe from her friend Dianne many years ago. Between my parents and my siblings, this never lasts long at family gatherings. My brother can usually be found digging into this Italian pasta salad at 11:30pm after we have finished our 20th game of Mahjong.

Mom would prefer we left out the black olives and peppers. My husband would leave out the black olives, peppers, and onions. Dad would love it if I added more salami. I think it’s perfect the way it is.

This Italian pasta salad is delicious and simple. I could literally eat a whole batch by myself, but that would not go over well with my family. It is the worst when you go to the fridge at my parent’s house looking for your favorite pasta salad, and you find out that someone ate it all. Usually, my dad and brother are to blame.

For this recipe you can certainly use bottled Italian dressing or use the packets of dry Italian dressing, but I sometimes make my own Italian dressing.  Check out my Homemade Italian Dressing recipe.

Description

This is a family recipe that we all love.  It is so amazing and the perfect summer salad, or any time of year really.


Ingredients

Scale
  • 1 (12 oz) box tri-color rotini pasta
  • 1 (2oz) jar diced pimentos
  • 1 (3.8 oz) can sliced black olives
  • 1/2 red onion, chopped
  • 1 yellow pepper, chopped, you can substitute a green or red pepper
  • 1/3 pound hard salami, cut into strips
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup Italian dressing

Instructions

  1. Cook pasta according the instructions on the box.
  2. In an extra large bowl, mix all ingredients together. Chill and enjoy.
