Oven Roasted Asparagus

Asparagus has to be one of my favorite vegetables. I could eat it at every meal. Not all of my family are big fans. My two daughters will eat it, but my husband and son, not so much. This oven roasted asparagus is so easy and so good. Simple ingredients make the best recipes and this oven roated asparagus only takes about 10 minutes to cook.

When prepping the asparagus, hold the asparagus at both ends and bend it until it snaps. This will get ride of the woody bottom end that is tough. Please don’t forget this part. It will feel like you are throwing a lot of the asparagus away, but really, that part doesn’t taste very good anyways.

We have an asparagus patch in our back yard and the kids love to harvest it for me. It never produces enough that are all ready at the same time, so I often get more from the grocery store. My brother-in-law has a lot of wild asparagus in the ditches near his house and he says there are always people stopping trying to find it. Honestly, that seems like more work, plus the cost of the gas that you use driving around would buy you some asparagus from the store. It doesn’t really matter how you get your asparagus, just make sure to use this oven roasted asparagus recipe to cook it. It is so yummy!

  • 1 bunch of asparagus (about 1 pound)
  • 4 tablespoons olive oil
  • 1/2 to 3/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Prep asparagus spears by holding them at both ends and bending them until they snap.  Throw away bottom part that snapped off.
  3. Line a baking sheet with tin foil and spray it with cooking spray.
  4. Lay out your asparagus spears in one layer.
  5. Drizzle with olive oil.  Season with seasonings and then stir asparagus around a little to evenly distribute seasonings.
  6. Bake for 10 to 12 minutes or until tender.  The length of time to bake it depends on how large your spears are.  The bigger they are the longer they will take to cook.
