Incredible Brown Butter Banana Muffins
I think brown butter is my new favorite ingredient to incorporate into my baking adventures. I have yet to try it in cooking, but I am sure it is just as delicious. Lately my family has not been eating the bananas I buy every week. This means that I have a lot of over ripe bananas to use up. My husband actually used to throw away my over ripe bananas (okay, they were really over ripe, but I really was going to make banana muffins. I just hadn’t gotten to it yet). Let’s just say, I have had a lot of practice making these Incredible Brown Butter Banana Muffins.

Brown butter is actually really easy to make. I was super worried that I was going to burn it the first time I made it. Once I got the hang of it, it was incredibly easy. It smells so good and adds a depth of flavor to these muffins that you wouldn’t otherwise have. My 6 year old’s reaction to smell of brown butter was, “Mmmm, Mom that makes me want to melt.” My kids absolutely love these Incredible Brown Butter Banana Muffins, my son in particular. I think the first time I made the perfected recipe, he ate 5 muffins in one sitting and asked for more. Here are specific instructions on how to make brown butter. Basically, you heat your butter on the stove until it foams, then the foaming subsides and the milk solids separate and brown. Make sure to watch it carefully so it doesn’t burn.

Nuts or No Nuts?
When it comes to banana muffins, I feel like people usually have a strong opinion one way or the other about whether to add nuts or not. My mom would say to always add nuts, specifically walnuts. My kids don’t like nuts in their banana muffins. I love nuts, but I also prefer my banana muffins without nuts. There is just something about biting into a soft banana muffin without biting into a hard nut. All that being said, you certainly can add nuts to this recipe if you prefer. Walnuts or pecans are great choices. Just add 1/2 cup of your favorite chopped nuts to the batter.

These incredible brown butter banana muffins are amazing. Soft, moist and delicious. They freeze really well and are perfect for busy mornings before school.
Ingredients
- 2 cups all purpose flour
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- 1/2 cup brown butter
- 1/3 cup brown sugar
- 1/3 cup white sugar
- 1/4 cup maple syrup
- 2 large eggs
- 1 teaspoon pure vanilla
- 2 large overripe bananas, mashed
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Line muffin tins with muffin liners.
- In a large mixing bowl, combine flour, sea salt and baking soda
- In a stand mixer, cream together brown butter, brown sugar and sugar. Add maple syrup, eggs and vanilla and mix until combined.
- Add bananas and mix.
- Gradually add dry ingredients and mix until well combined.
- Put 1/4 cup of batter in each muffin cup.
- Bake for 22 to 23 minutes.
Notes
- Make sure not to overfill the muffin cups or there will be a mess. 1/4 cup of batter is about right.
- These freeze beautifully. My kids love these muffins and they make a quick and easy breakfast when I have a bunch in the freezer ready to go.
