Festive Fruit Pizza

This Festive Fruit Pizza is the perfect addition to any 4th of July celebration. You can’t go wrong with a lemon sugar cookie crust (this crust comes from my Lemon Sugar Cookie recipe) and delicious cream cheese fruit dip. This fruit pizza is seriously divine. Mix it up with whatever fruit you like. I wanted to stick with the red, white and blue theme.

When I was a kid we always had fun celebrating the 4th of July. We had a neighborhood block party with kids games, volleyball, snow cones, and there was always a potluck. This Festive Fruit Pizza is perfect for a pot luck or, family get together, this 4th of July.

In order to get the crust just right you need the right equipment. I always use my favorite pizza pan for the best results. It makes baking this crust a breeze. It is crispy on the outside and soft on the inside.

Description

Delicious and flavorful. This recipe is perfect for any 4th of July celebration. It has a buttery lemon sugar cookie crust and a creamy cream cheese fruit dip. Top with your favorite fruit.


Ingredients

Lemon Sugar Cookie Crust

  • 2 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tarter
  • 1/8 teaspoon sea salt
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 large egg
  • 1/2 teaspoon pure vanilla
  • 1 lemon zested and juiced

Cream Cheese Fruit Dip

  • 6 oz cream cheese, softened
  • 3/4 cup vanilla Greek yogurt
  • 2 teaspoons pure maple syrup

Fruit to go on top

  • 3/4 cup fresh strawberries, sliced
  • 3/4 cup blueberries

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl sift together flour, baking soda, cream of tarter, and sea salt.
  3. In the bowl of a stand mixer with paddle attachment, cream together butter and sugar. Add egg, vanilla, lemon juice and lemon zest. Beat until well combined.
  4. Next add flour mixture about a cup at a time, beating well after each addition.Lemon sugar cookie dough in a stand mixer with a paddle attachment
     
  5. Line a 14 inch pizza pan with parchment paper. Place dough on the parchment paper and spread it out to the edges.Lemon sugar cookie dough spread out on pizza pan.
     
  6. Bake for 18 minutes. While it’s baking, with a hand mixer, beat the soften cream cheese in a medium sized bowl. Once it’s well beaten add yogurt and maple syrup and beat until smooth.
  7. When the crust is done, take it out and let it cool completely.Baked crust on a pizza pan for festive fruit pizza
     
  8. Once cooled, add the fruit dip and spread it evening over the crust. Add your favorite fruit, in this case I used strawberries and blueberries.

Notes

  • Try to get the dough spread out as evenly as possible, on your pizza pan, so that it cooks evenly.
