Easy Oven Roasted Mushrooms

In my family, there is a love hate relationship with mushrooms. I love them, my husband hates them. (My husband basically hates all vegetables. Ha! He will eat carrots cooked or raw and broccoli if it’s cooked in a casserole). My oldest will eat mushrooms, but the 3 other kids usually won’t. I love mushrooms so much. I decided I needed to create a roasted mushroom recipe. Plus, I am eating healthier and mushroom have many health benefits. Check out this article from Good Housekeeping that talks about the health benefits of mushrooms. This easy oven roasted mushroom recipe is so good. I’ve tried it with white mushrooms, as well as baby portabellas, and both are delicious.

Cleaning Mushrooms

I have read many things that say you shouldn’t wash your mushrooms, that you should just wipe them off. The main reason for that is that mushrooms soak up everything, so they can get water-logged and slimy if you wash them. Well, I just can’t fathom not washing all that dirt off my mushrooms. I think it’s fine to wash your mushrooms, just be sure the let them dry out before cooking them. You can also go with the wiping method to get them clean by using a damp paper towel or brush the dirt off with a pastry brush.

Endless ways to use these Easy Oven Roasted Mushrooms

These mushrooms are so versatile. I usually prep and cook my mushrooms at the beginning of the week so I have them ready to use every day. Obviously, they are best eaten the day they are cooked, but they are still delicious days later too. You can eat these mushrooms as a side dish or main dish, throw them in a casserole or put them on top of a burger. I like to mix them with oven roasted sweet potatoes or roasted baby red potatoes. These are also wonderful with all types of eggs, whether that’s as a side dish with fried eggs, with scrambled eggs, or in an omelet. One of my favorite breakfasts lately is oven roasted sweet potatoes, these easy oven roasted mushrooms and 2 fried eggs on top.

Description

These easy oven roasted mushrooms are yummy and flavorful.  They are versatile and can be thrown into any recipe to make it better, whether that’s in an omelet, on a burger or in a casserole.  They are also great on their own.

Instructions

  1. Preheat oven to 425 degrees Fahrenheit
  2. Line a cookie sheet with foil and spray with cooking spray
  3. Clean and quarter mushrooms and place them in a large bowl
  4. Add sea salt, onion powder, garlic powder and black pepper.  Stir well.
  5. Add olive oil and stir again.Mushrooms in a stainless steel bowl
  6. Pour mushrooms on prepared baking sheet.Mushrooms on a foil lined cookie sheet ready to go in the oven
  7. Bake for 35 minutes, stirring once halfway through.
