Delicious Applesauce Spice Cake

This applesauce spice cake is super moist. It certainly could be eaten without the glaze on top, but why would you want to do that? My husband and kids could probably just eat the glaze with a spoon.

It was my youngest’s 2nd birthday yesterday. I wanted to create a new recipe, so the delicious applesauce spice cake recipe was born. My two year old loves applesauce, so I thought this would be the perfect cake. Turns out, she doesn’t like the spice part of cake. I think she wasn’t feeling great last night, so she wasn’t really hungry. Yeah, let’s blame it on that. I thought this cake was fantastic.

I used my bundt pan for this recipe, but you can always use a round cake pan if you don’t have a bundt pan. Whichever pan you use, make sure you butter and flour it so that your cake comes out easily.

Description

This applesauce cake is so moist and has just the right amount of spice.

Ingredients

Scale

Cake:

  • 3 cups unbleached all-purpose flour
  • 1 cup maple sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon sea salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 1/2 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 1/2 cup whole milk
  • 1/4 cup apple juice

Glaze:

  • 1/4 cup unsalted butter, melted
  • 1/3 cup whole milk
  • 1 teaspoon pure vanilla
  • 2 1/2 cups powdered sugar

Instructions

Cake:

  1. Preheat oven to 350 degrees.
  2. Grease and flour a bundt pan. Set aside
  3. In a large bowl, sift together flour, sugar, baking soda, cinnamon, cloves, nutmeg, and sea salt. Set aside.
  4. In a stand alone mixer with a paddle attachment, cream butter. Add maple syrup, egg, and applesauce. Mix on low speed until combined. Add milk and apple juice.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Bake for 40 minutes or until toothpick comes out clean.
  7. Let cool in the pan for about 5 minutes then remove to cool on a wire cooling rack.

Glaze:

  1. Once cake has cooled completely, make the glaze by combining all ingredients and whisking until smooth. Pour glaze over cooled cake and let glaze drip down the sides of the cake.

Notes

To Freeze:  Bake and let cool completely.  Once cooled wrap cake in plastic wrap then put the cake in an airtight container. Make the glaze and put it in a freezer bag and then into the air tight container with the cake.  Freeze.

When ready to eat:  Thaw on the counter for 2 to 3 hours.  If needed, set the glaze in warm water for a few minutes, then pour glaze over the cake.
