Turkey and Stuffing Casserole

Thanksgiving will be here in a week. That means turkey, and a lot of it. I feel like there is always left over turkey at Thanksgiving. Oh, the possibilities. There are so many things you can do with left over turkey. You could freeze it (for a later date when you want to make this turkey and stuffing casserole), use it in a soup, make my hot chicken sandwich, but use turkey instead, or use it in this fantastic turkey and stuffing casserole. It is so delicious and freezes beautifully. It is one of my husband’s favorite meals, probably because he loves stuffing. (Who doesn’t?)

This recipe calls for cream of chicken soup, cheese, stuffing and turkey of course. (It is great with chicken too!) I almost always make my own cream of chicken soup. (It just tastes better). I do not make homemade stuffing, however. Maybe some day I will get the ambition to do it. For now we use stove top stuffing, (let’s face it, it’s easier, and tastes delicious), but feel free to make homemade stuffing for this recipe. It’s amazing either way.

If you are looking for a fantastic whole turkey recipe, you have to check out my oven roasted turkey breast recipe (I used a bone in turkey breast, but you can use a whole turkey for this recipe. Just look at the cooking times chart as the cook time is based on weight). It is so juicy and flavorful.

Most people only make a whole turkey or whole chicken on special occasions. I challenge you to make one on some random Monday night. (I just got this new silicone roasting rack and it’s awesome to use when roasting a turkey, plus it’s dishwasher safe). You will not regret making a delicious bird on a random Monday. Just freeze the left over meat in quart freezer bags so you are ready to make a soup, casserole, sandwiches or even tacos on a moments notice. It’s so convenient.

  7. Bake for 25 minutes.

Notes

  • I like to substitute olive oil for the butter in the stove top stuffing recipe.  It works perfectly and is healthier.

To Freeze: Prepare casserole as directed, but do not bake.  Cover with plastic wrap, then the lid and freeze.

To Prepare: Remove casserole from freezer and let thaw in the refrigerator for at least 24 hours.  Bake as directed, adding a few minutes if needed.
