Slow Cooker Hot Chicken Sandwich

This hot chicken sandwich is a favorite in our house. It was inspired by a recipe from my husband’s family cookbook. His extended family compiled all of their favorite recipes into a cookbook. This recipe is so easy and it is so yummy. I decreased the amount of mayo and cream of chicken soup because I think the original version was to saucy. Also, that makes it a little bit healthier.

This past weekend we celebrated all three of my kids’ birthdays. I made this hot chicken sandwich and it was a hit. Even my dad, who is a self proclaimed hater of chicken, loved it, (yeah, I know, who in this world hates chicken? It’s weird. He hates peanut butter too, which is also weird). He even said, “This one is terrific and should be on your blog.” This recipe is also fantastic with turkey. Perfect for that left over turkey after the holidays.

This recipe makes a large batch so it is also great for a crowd. Just put it in a slow cooker to heat it up and keep it warm. Here is the slow cooker that I like best. I am a little old school when it comes to my slow cooker. I like the ones that have low, high and warm versus the digital display. This slow cooker carrier is a must. Great for transporting your delicious hot chicken sandwich while keeping it warm, and without spilling it.

Slow Cooker Hot Chicken Sandwich

Description

This recipe is amazing.  It is the perfect recipe for a large group of people.  My Instant Pot Shredded Chicken Recipe is perfect to make the cooked chicken for this recipe.  You could also use my Oven Roast Turkey Breast instead of chicken in this recipe.


Ingredients

  • 8 cups cooked chicken, shredded
  • 1 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1 can cream of chicken soup
  • 1 orange bell pepper, chopped
  • 1/2 cup celery, chopped
  • 1 medium onion, chopped
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 4 cups shredded sharp cheddar cheese
  • 25 hamburger buns

Instructions

  1. In a large bowl, mix together the mayo, plain Greek yogurt, cream of chicken soup, orange peppers, celery, onions, salt, black pepper, onion powder, garlic powder, and paprika. Stir until well combined.
  2. Add cooked chicken and cheese. Mix well.
  3. Pour into a slow cooker and cook on high until the cheese is melted and everything is heated through. (this usually takes 1.5 to 2 hours) Then turn to low or warm and serve on buns.

Notes

You can use whatever cheese you like.  If you like it a little spicier, pepper jack cheese would be delicious.  

You can also add whatever peppers or onions you like.  Again, if you want it to have a little bit of a kick, jalapenos would be really good.

I always use these slow cooker liners when making anything in the slow cooker.  It makes clean up a breeze.

Be sure to turn it to low or warm as soon as it is heated through and the cheese is melted.  You do not want the chicken to overcook.
