Lemon Pecan Bars

Lemon bars have never been my favorite dessert. I am a chocolate kind of girl. My husband loves lemon bars and my girls will literally ask to suck on lemons, so I decided it was time to create a lemon bar recipe. These lemon pecan bars are divine. I might even choose to eat them over something chocolate. For those who know me well, know this is huge.

These bars have just the right amount of lemon, pecans and cream cheese to balance all the flavors. This recipe calls for lemon juice and lemon zest. Lemon zest in anything is yummy. I feel like it adds so much more lemony flavor than just using the juice. I like to use my zester, but you could just use a regular cheese grater too.

It you are looking for a great lemon bar recipe, you have to try these lemon pecan bars. They aren’t your traditional lemon bars, but I think they are better. Who doesn’t love pecans and cream cheese? Put those two things with lemon and it is a homerun.

Lemon Pecan Bars

Description

These lemon pecan bars are so good, that I have been converted to a lemon bar lover.  They are the perfect combination of lemon and pecans.  


Ingredients

Scale
  • 3/4 cup brown sugar
  • 1 1/4 cups pecans, chopped
  • 1 1/4 cups all purpose flour
  • 3/4 cup melted butter
  • 12 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 egg white
  • 4 tablespoons fresh squeeze lemon juice, about 2 lemons
  • zest of 1.5 lemons
  • 1 1/2 tablespoons whole milk
  • 1 1/2 teaspoons vanilla

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium sized bowl, mixed together brown sugar, pecans, flour, and melted butter.  Reserve 3/4 cup of this mixture for the top of the bars.  Press the rest into an 8×11 inch glass pan.  Pecan crust pressed into glass pan with 3/4 cup reserved for topping
  3. Bake the crust for 12 to 15 minutes.
  4. While crust is baking, mix together cream cheese, sugar, egg, egg white, lemon juice, lemon zest, milk and vanilla.cream cheese mixture in glass bowl
  5. Once crust is done baking, pour cream cheese mixture over crust and smooth it out so that it is an even layer.Pecan crust topped with cream cheese mixture
  6. Sprinkle with reserved pecan mixture.Cream cheese mixture of lemon pecan bars topped with pecan topping.
  7. Bake for 30 minutes.  
  8. Let cool for at least 30 minutes before cutting.
