Fantastic Healthy Flatbread Breakfast Pizza

Description

My whole family loved this flatbread breakfast pizza. It is delicious and it’s not just a meal for breakfast time. Plus it’s kid and picky husband approved.


Ingredients

Scale
  • 1 Toufayan wheat flatbread
  • 1 whole egg and 4 egg whites
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 strips of cooked bacon, crumbled
  • 1/3 cup Mexican style shredded cheese
  • 1/2 of a yellow pepper, chopped
  • 1/4 of an onion, chopped
  • 1/2 heaping cup of mushrooms, chopped

Instructions

  1. Preheat oven to 350 degrees
  2. Saute peppers, onions and mushrooms until cooked through.
  3. While peppers, onions and mushrooms are cooking, put the one whole egg and 4 egg whites in a small bowl and whisk.  Add the salt, black pepper and garlic powder and whisk again.  Scramble eggs in a pan and cook until just set.  Remove from stove and set aside.
  4. Check on the vegetables and remove them from the heat if they are cooked to desired doneness. (remember they will cook in the oven too).
  5. Line a cookie sheet with parchment paper.
  6. Lay down your flatbread.Flatbread on parchment lined cookie sheet

  9. Bake for 15 minutes
  10. Cut into 8 slices and enjoy!

Notes

These flatbread breakfast pizzas are so versatile.  You can add whatever vegetables you like.  Spinach would be a great choice.  Also, substituting sausage or ham for the bacon are great options too.  If you don’t want meat on it, just add some more whole eggs or egg whites to the scrambled egg portion.
