Eggs on Avocado Toast

These eggs on avocado toast are a quick and healthy breakfast. They go great with a side of my Perfectly Cooked Bacon. Also, I love to use either sliced french bread or my English muffin bread for the toast.

Eggs on toast have always been one of my favorite breakfasts. My mom used to make it all the time when I was a kid. Also, it was one thing that I could stomach eating when I was so sick in the beginning of my pregnancies, although I made sure my husband cooked them so the yolks weren’t runny, since during pregnancy the runny yolk made me nauseous. This sounds really strange, but eggs on toast hold a special place in my heart.

I tried to think of a way to make eggs on toast better and thought to myself, “avocado makes everything better”. I could seriously just eat a whole avocado for a meal. So good. This recipe is incredibly simple, but so delicious. You could spice it up with some hot sauce, salsa, banana peppers, or some jalapeno peppers, but I like it as it is.

Description

Eggs on avocado toast is a healthy and filling breakfast.  You can use whatever bread you want for the toast.  Try out my English muffin bread recipe for the toast.


Ingredients

Scale
  • 1 tablespoon extra light virgin olive oil
  • 2 large eggs
  • 2 sliced bread (I like to use my English muffin bread)
  • 1/2 large avocado
  • sea salt, pepper and garlic powder to taste

Instructions

  1. Cut open and pit avocado.
  2. Preheat a skillet on medium heat. Once skillet is hot, add olive oil. Crack your eggs into the pan, being careful not to break the yolks. Fry eggs on medium heat for about 3 minutes on the first side. While egg is cooking add your two pieces of bread to the toaster and toast them.
  3. Carefully flip over the eggs, trying not to break the yolk. Fry on the other side for about 1 to 2 minutes. (I like runny yolks, but if you want over medium or over hard, cook your eggs longer).
  4. While eggs are cooking on the other side, take a knife and scoop out the avocado and spread it on both pieces of toast.
  5. When eggs are cooked place them on top of your toast. Season with salt, pepper, and garlic powder and enjoy.
