Easy Two Ingredient Apple Salad
One of my very best friends from college, Breanna, has always been an inspiration to me. She has inspired me to be a better person in many ways. The one that is relevant to this blog, and food related, is how she inspired me to eat healthy. Breanna has always eaten healthy and made exercise a daily part of her life. There was never an excuse not to exercise or eat well. (In college, she would get my lazy butt out of bed at 5:30am to go work out). She made being healthy her lifestyle. I am thankful that some of that mind set rubbed off on me. Although, I could use more of her motivation to work out lately. This easy two ingredient apple salad has been a staple in my life since Breanna first introduced me to it in college. It is so simple, yet so delicious, and healthy.

I make this two ingredient apple salad often. Every time I make it, it reminds me of my dear friend, Breanna. My children devour it. In fact, last night my 7 year old son had 4 helpings and kept saying, “This is so good mom. So good.”
The Ingredients
In this recipe, you can use whatever apples and yogurt you like best. We love using honey crisp apples and strawberry yogurt, but the combinations are endless. Breanna would use whatever yogurt she had in the fridge. It was different every time. I tried experimenting with changing the recipe up by adding some lemon juice, lemon zest and pecans. It just wasn’t the same, plus the kids didn’t like it as much.

Ingredients
- 4 honey crisp apples, diced (you can use whatever apples you prefer)
- 2 tubes of strawberry go-gurt (substitute your favorite yogurt)
Instructions
- Dice up apples and put them in a bowl
- Squirt both tubes of go-gurt into the bowl and stir
- Enjoy!

- Do not make this recipe ahead of time. It is best eaten the day it’s made.
