Cucumber, Tomato and Onion Salad with Feta

Wow! It’s been way too long since I have posted anything. Let’s just say, life is busy and summer was crazy with four kiddos home, ALL DAY LONG! Well, now that summer is almost over and the kids are going back to school soon, it’s time to get back to creating recipes. This cucumber, tomato and onion salad with feta was inspired by vegetables that I got from my garden this summer. I love all of these vegetables (well, technically tomatoes are a fruit). When you put them together with some seasoning, a little balsamic, a little olive oil and feta, they are divine.

My son, who would only eat the cucumber part of the salad, said it was delicious. No one else in my family would try it, because I swear they all have an aversion to vegetables. I blame their dad as the only actual vegetables he will eat are carrots, fresh pea pods and occasionally broccoli if it’s in something like chicken alfredo.

Let’s talk about balsamic vinegar. Last summer, one of my best friends and I went to the International Vinegar Museum in Roslyn, SD, along with my oldest and my niece. Yes, there is actually an international vinegar museum. As of 2022 the population in Roslyn, SD was 181, so you know this museum has to be one of the only things that brings people to town.

We walked in and there was this little old man there. He was probably in his 70’s and was very eager to tell us all about vinegar. We even got to taste test vinegar, almost like a beer flight, only with vinegar. You take a q-tip, dip it in the vinegar, then taste it. It was some of the best vinegar I have ever tasted. My oldest definitely liked the red raspberry vinegar the best. I left there with two bottles of vinegar (red raspberry vinegar and balsamic vinegar of Modena, Italy) and a t-shirt that says, “I got pickled at the International Vinegar Museum.” We had so much fun.

You don’t need to have special balsamic vinegar for this cucumber, tomato and onion salad with feta. Although, if you want some special vinegar from the International Vinegar Museum, here is their online store. Both of the vinegars that I bought are available for purchase on their website.

In a bowl, combine all ingredients and stir.  

Notes

  • This salad needs to be eaten the day you make it.  It will get soggy if you make it ahead of time.
  • You could leave the season everything seasoning out, but it is soooooo good.  I recommend you get yourself some here.
