Turkey and Stuffing Casserole

Description

Use up that leftover turkey and stuffing and make this fantastic turkey and stuffing casserole.  The perfect comfort food.  It is so yummy, plus it is kid and freezer friendly.

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.  Spray a 9×13 pan with cooking spray. (You could use two 8×8 pans instead if you want to bake one now and freeze one for later).
  2. In a large bowl, mix together turkey 2 cups of cheese, cream of chicken soup and poultry seasoning.
  3. Pour mixture into your prepared 9×13 pan (or divide evening into two 8×8 pans).
  4. Make stuffing according to the package.
  5. Sprinkle remaining 1/2 cup of cheese over the top of the turkey mixture.Turkey and cheese in a pyrex glass casserole dish sitting on a wood table
  6. Pour stove top stuffing on top of the cheese, making sure it’s evenly distributed.Turkey, cheese and stuffing in a pyrex glass casserole dish sitting on wood table. This casserole is ready to go in the oven.
  7. Bake for 25 minutes.

Notes

  • I like to substitute olive oil for the butter in the stove top stuffing recipe.  It works perfectly and is healthier.

To Freeze: Prepare casserole as directed, but do not bake.  Cover with plastic wrap, then the lid and freeze.

To Prepare: Remove casserole from freezer and let thaw in the refrigerator for at least 24 hours.  Bake as directed, adding a few minutes if needed.
