Description

These incredible brown butter banana muffins are amazing.  Soft, moist and delicious.  They freeze really well and are perfect for busy mornings before school.


Ingredients

Scale
  • 2 cups all purpose flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 cup brown butter
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon pure vanilla
  • 2 large overripe bananas, mashed

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line muffin tins with muffin liners.
  3. In a large mixing bowl, combine flour, sea salt and baking soda
  4. In a stand mixer, cream together brown butter, brown sugar and sugar.  Add maple syrup, eggs and vanilla and mix until combined.
  5. Add bananas and mix.
  6. Gradually add dry ingredients and mix until well combined.
  7. Put 1/4 cup of batter in each muffin cup.
  8. Bake for 22 to 23 minutes.

Notes

  1. Make sure not to overfill the muffin cups or there will be a mess.  1/4 cup of batter is about right.
  2. These freeze beautifully.  My kids love these muffins and they make a quick and easy breakfast when I have a bunch in the freezer ready to go.
